Head Barista
You own the bar: the grind, the dial-in, the pour-over programme and the two people working it with you. We will retrain you on altitude extraction in your first fortnight — nobody arrives knowing how to brew at 93 °C.

Baker & Kitchen Lead
The oven is lit at five and the buns are out by half past. You run the bake and the short kitchen menu through to four, with one person alongside you from eight. We buy flour from the valley and apples from the orchard below Char Dukan.
