WHY IT TASTES DIFFERENT UP HERE
Water boils at 93° on this ridge.
Nine degrees cooler than at sea level, which changes everything about extraction. We grind coarser, pull longer, and brew at a ratio we had to rebuild from scratch when we moved up here. It is the reason a cup tastes like this and only like this.
